Zusammenfassung:	The present invention relates to a protective agent for food products and the like and for curing and/or storage rooms of the same, which includes at least one substance of the type preferably chosen among carboxylic acids and related derivatives, and normally used as a food additive and/or flavouring and/or excipient, and at least one substance, selected between a diluent and an emulsifying agent, preferably chosen among water, food additives, food flavourings and their combinations. La présente invention concerne un agent protecteur destiné à des produits alimentaires et similaires et destiné à des chambres de traitement et/ou de stockage de ces derniers, qui comprend au moins une substance du type choisi de préférence parmi les acides carboxyliques et des dérivés apparentés, et habituellement utilisée comme additif alimentaire et/ou aromatisant et/ou excipient, et au moins une substance, choisie entre un diluant et un agent émulsifiant, choisie de préférence parmi l'eau, les additifs alimentaires, les aromatisants alimentaires et leurs associations.
