The invention also provides recombinant plasmid expression vector comprising said polynucleotide sequence. The recombinant protein encoded by said polynucleotides leads to synthesis of lactones having flavour peculiar to Alphonso mangoes. La présente invention concerne un polynucléotide codant pour une enzyme impliquée dans la synthèse de lactone et un procédé de synthèse de lactones utilisant lesdits polynucléotides. L'invention concerne également un vecteur d'expression plasmidique recombinant comprenant ladite séquence polynucléotidique. La protéine recombinante codée par lesdits polynucléotides conduit à la synthèse de lactones ayant la saveur particulière des mangues Alphonso.
