Disclosed is a mixer shaft for a flour-mixing and -conveying device of a fresh noodle machine. The mixer shaft is provided inside an inner chamber of a mixer outer barrel (2511) and comprises a shaft body (251), a flour-pushing device (252), pushing blades (253), retreat blades (254) and a flange plate (255). The flour-pushing device (252) is of a continuous spiral shape, is provided on one end of an outer cylindrical surface of the shaft body (251), and corresponds to the positions of a flour-filling port (23) and a water-filling port (24) on the mixer outer barrel (2511). The flange plate (255) is provided on an end face, facing the flour-pushing device (252), of the shaft body (251).
