Le procédé de la présente invention comprend la conversion du 1-kestose en saccharose et en fructose dans une solution de sucres contenant du kestose et plus de 10 mM de saccharose (3 g/l), ledit procédé comprenant l'hydrolyse enzymatique du 1-kestose (de préférence à l'aide d'enzymes 1-FEH - EC 3.2.1.153).
