La présente invention concerne des compositions servant à réduire la quantité de bactéries associées à un produit alimentaire, ladite composition comprenant un biocide et un agent non biocide, la composition étant capable d'éliminer au moins 25 % de bactéries en plus que le biocide seul ; et des procédés permettant de réduire la quantité de bactéries associées à un produit alimentaire au moyen de ces compositions.
