La présente invention concerne un procédé de raccourcissement de la durée de conditionnement d'une composition de coeur de gomme à mâcher dans un procédé de préparation de gomme à mâcher, dans lequel du palatinose hydrogéné ou non hydrogéné est mélangé avec une composition de base de gomme à mâcher et l'utilisation de palatinose hydrogéné ou non hydrogéné dans une composition de coeur de gomme à mâcher pour raccourcir la durée de conditionnement.
