The enzymes immobilized by the above process include Penicillin acylase from rE.coli RE III (pKA18), Novel Penicillin acylase from Achromobacter sp (CCM4834) expressed in rE.coli BL21 (pK1P1) CCM 7394 and rE.coli RE III(pKX1P1). La présente invention concerne un biocatalyseur stable et viable ayant une activité et une stabilité foncitonnelle élevées et un procédé d'immobilisation de celui-ci. Le procédé d'immobilisation est basé sur le principe de piégeage de précipité d'enzyme partiellement purifiée qui est simultanément agrégé par un agent de réticulation tel que le glutaraldéhyde et additionnellement piégé dans une combinaison d'un polymère naturel tel que la gélatine et un polymère synthétique tel que l'alcool polyvinylique présentant une gélification efficace dans des conditions de température et de pH modérés, pour réaliser un biocatalyseur stable.
