En particulier, l'invention concerne une N-acétylglucosamine-2-épimérase dérivée de Bacteroides fragilis NCTC 9343 et un procédé de préparation d'acide CMP-N acétylneuraminique faisant intervenir ladite N-acétylglucosamine-2-épimérase. Selon l'invention, l'acide CMP-N acétylneuraminique peut être produit en grande quantité, de manière économique, par une réaction comprenant une seule étape, à l'aide de monophosphate de cytidine et de N-acétyl-D-glucosamine qui constituent des substrats peu coûteux.
