La présente invention concerne un édulcorant peu calorique excellent en termes de sécurité et de douceur. Selon l'invention, on propose l'édulcorant contenant en tant que substance active un dipeptide choisi dans le groupe constitué par l'alanyltryptophane, le valyltryptophane, le lysyltryptophane, l'arginyltryptophane, l'arginyltyrosine et la lysylalanine ou un sel de ceux-ci.
