La présente invention concerne des procédés pour fabriquer des compositions protéine-huile de diacylglycérol (huile DAG) pour incorporation dans des compositions alimentaires. Un ingrédient sous forme liquide comprenant une protéine est combiné à de l'huile DAG et le mélange est ensuite séché par atomisation. L'invention propose également des compositions protéine-huile DAG séchées.
