Zusammenfassung: | The invention can be used for machine building and for industrially producing meat, poultry and fish food products. The inventive method consists in supplying meat scraps from an adjacent direct-flow chamber to the cutting-separating grate of a meat hasher cutting unit. All processes performed on the grate interacting with a separating one-side knife, are cyclical. When each cycle is over, a meat is returned back to said direct-flow chamber and is pushed to the operation area of the blades of the knife which interfaces with an intermediate grate. On the cutting-separating grate, the meat is ground exclusively by cutting, wherein it is massed and degassed, and all types of rough inclusions in the form of bone, cartilage and tendon fragments, large vessel parts, membranes and structures combining muscle cells into beams are removed. A farce meat is characterised by a stable high quality thereof, a high moisture-retaining capacity and a low iron and calcium content. The feeding unit of the meat hasher is provided with a feeding worm (3), receiving knife (5), receiving grate (6), shaft (8) and a second pressure worm (11). The input opening of a socket (12), which encompasses main (10) and additional (11) pressure worms, is embodied in the form of a bellmouth (13). The direct-flow chamber of the cutting unit head (14) adjacent to the cutting-separating grate is embodied such that it is shortened due to the position of the one-side knives arranged therein. The blades of each knife are placed in front of the spaces between the blades of the opposite knife. The gaps between interacting grate surfaces are excluded by the selected shapes of the wearable parts thereof. The cutting elements of grates and knives are self sharpenable during the mean hasher operation, wherein the wearing intensity is controlled by an automatic system for pressing the knives to the grates. Tools are sharpened in 3-6 months of the use thereof. The use of the inventions in the machine building industry makes it possible to begin the production of a new generation of meat hashers and self-sharpening cutting tools suitable for any type of meat hashers. The industrial use of the inventions in meat-, poultry and fish processing industries makes it possible to increase the labour productivity, improve the quality of food products and to increase the production profitability.
