Zusammenfassung:	Particulate compositions comprising 10-95% wt of a matrix material and 5-90% wt of fatty matter, wherein said fatty matter comprises 5-100% of phytosterols (and wherein the compositions are preferably low in triglycerides of transunsaturated fatty acids), for use as for example a creamer and/or whitener. The invention also relates to a process for preparing such particulates and food products containing such creamer. La présente invention a trait à des compositions particulaires comportant 10 à 95 % d'une matière matricielle et 5 à 90 % de matière grasse, dans lesquelles ladite matière grasse comporte 5 à 100 % de phytostérols (les compositions étant de préférence à faible teneur de triglycérides d'acides gras trans insaturés), destinées par exemple à être utilisées sous la forme d'une matière crémeuse et/ou de blanchisseur. L'invention a également trait à un procédé pour la préparation de telles matières particulaires et des produits alimentaires contenant une telle matière crémeuse.
