L'invention concerne un procédé permettant de réduire les niveaux microbiens pendant la production de viande. Ce procédé consiste à appliquer un agent antimicrobien sur la peau d'un animal avant de retirer ladite peau de la carcasse. Ce procédé peut également consister à rincer et à sécher la peau de l'animal.
