Zusammenfassung:	The invention relates to an edible composition, preferably an edible emulsion, which comprise high amounts, e.g. at least 15 mg/kg of one or more coloured carotenoids, but is not coloured in a manner as expected when using such high amounts of carotenoids, as defined by the composition having a yellowness factor of less than 4000 g/kg, and a yellowness index in the range of 1 to 90. L'invention concerne une composition comestible, de préférence une émulsion, contenant de grandes quantités, par exemple au moins 15 mg/kg d'un ou plusieurs caroténoïdes colorés, tel que défini par la composition possédant un facteur de jaune inférieur à 4000 g/kg, et un indice de jaune compris entre 1 et 90, cependant cette coloration ne ressemble pas à ce que l'on pourrait attendre d'une coloration effectuée au moyen d'une si grande quantité de caroténoïdes.
