L'invention concerne un procédé de test et un appareil de test pour la surveillance de l'hygiène d'un échantillon de test provenant d'un matériau biologique ou d'une surface portant un matériau biologique afin de détecter la présence de phosphate et de glucose comme une mesure de l'hygiène grâce à l'utilisation d'un appareil de test à membrane perforable de type tampon, ou d'un appareil de test à flux capillaire ou à flot latéral.
