DS101 (KCCM-10171), more specifically, for preparing erythritol using mother liquor produced from purification process, which comprises 30 SIMILAR 60 % of trehalulose, 10 SIMILAR 30 % of palatinose, 5 SIMILAR 15 % of fructose, 5 SIMILAR 25 % of glucose and 0 SIMILAR 10 % of sucrose. L'invention concerne un procédé de fermentation à haut rendement, qui repose sur l'utilisation d'un nouveau mutant de Torula sp. DS101 (KCCM-10171), et plus précisément un procédé de préparation de l'érythrite utilisant une solution-mère issue du processus de purification appliqué aux substances suivantes: 30 à 60 % de tréhalulose, 10 à 30 % de palatinose, 5 à 15 % de fructose, 5 à 25 % de glucose et 0 à 10 % de sucrose.
