Cette invention a trait à une composition antimicrobienne et antivirale, se présentant sous forme de poudre ou de concentré liquide en deux parties et servant à laver et à assainir les aliments, la surface d'aliments, les ustensiles alimentaires, les eaux de traitement, les locaux pour animaux et les carcasses d'animaux. On peut également utiliser cette composition pour faire diminuer la population microbienne et virale chez des animaux, le nombre de microbes pathogènes chez l'homme et celui des microbes opportunistes sur les oeufs ainsi que pour traiter des maladies de peau. Cette composition renferme trois substances réactives qui, en solution, constituent une substance oxydante, et, éventuellement, une source d'acide de qualité alimentaire. Les substances réactives comportent une source naturelle d'un composé azoté, quaternaire ou capable de fournir des protons, admissible du point de vue alimentaire, ainsi qu'un agent oxydant et une source d'halogénure.
