The legume starch preferably also has a solubility in water of between 10 and 85%. The industrial fluid is particularly a fluid for use in boreholes with a pH greater than 8.5 and which can be used at a temperature above 130° C. The invention further relates to a method for preparation of a legume starch, selected thus by the viscosity thereof and also several families of novel legume starches, characterized by particular ranges of viscosity and aqueous solubility. |
