Zusammenfassung:	A device for producing fondant and a method for producing fondant are provided. The device is suitable for the continuous production of fondant from a saccharide-containing solution, having a temperature above or in the range of the saturation point, i.e. boiling temperature. The device is formed from a transport screw having a cooled stator and a cooled rotor for cooling the saccharide-containing solution and for inducing crystallization.
