Zusammenfassung:	A convection oven includes an open coil heater element around a radial fan which expels air radially outward and through the coils of the heating element. A controller permits air temperature regulation and self-protection of the coil against over-temperature conditions, for example as a result of failure of the coil or failure of the motor that drives the fan.
