Zusammenfassung:A method for the preparation of polyphenol food concentrate of fruits and berries raw stock provides for mixing the pressing with ethyl alcohol, keeping the mixture in hermetic conditions, separation of extract and solid phase and concentrating thereof in vacuum to a complete removal of alcohol, and subsequent incorporation of invert sugar into extract. As fruit and berries raw stock grapes of white grades and black-currant are used, which concentrated extracts are mixed before the incorporation of invert sugar in this mixture.
