Zusammenfassung: | The purpose of the present invention is to provide a method for manufacturing a substitute for palm oil that can be performed on a mass scale at a low cost. The method for manufacturing a fat/oil of the present invention comprises: step A for culturing a yeast belonging to the genus Lipomyces; step B for disrupting the yeast belonging to the genus Lipomyces to give an emulsion; step C for separating the emulsion into a residue and a liquid by passing through a nonwoven or woven fabric; step D for dissolving the fat/oil in the residue in a solvent; and step E for collecting the fat/oil by volatilizing the solvent. The solvent is a mixed solvent consisting of n-hexane and ethanol at a mixing ratio of 2:1 to 5:1. Preferably, the nonwoven or woven fabric has an average pore size of 0.5-10 [mu]m inclusive and an air permeability of from 2 cm3/(cm2.s) to 45 cm3/(cm2.s). |
