Zusammenfassung: | The present invention is to provide a composition containing whole-fat soy flour, which can be used as a replacement for some or all raw ingredients (e.g. eggs or wheat flour) in food products, or added as a new raw material ingredient, thereby improving taste and mouth feeling. For food products that use wheat flour as a raw ingredient, e.g. candy sweets and bread, the disclosed composition can be used to replace eggs or wheat flour or added as a new raw ingredient, thereby providing a light, fine mouth feeling. In fried foods, the disclosed composition provides a good mouth feeling. The invented composition containing whole-fat soy flour is characterized in containing whole-fat soy flour, soy protein, a straight-chain oligosaccharide, and an emulsifier, in which the content of whole-fat soy flour is 50-90% by weight.
