Zusammenfassung: | FIELD: meat processing industry. ^ SUBSTANCE: brain is prepared by subsequent dissolution of salting components in water or defatted pasteurized milk, or milky whey. As starting cultures preparation containing Lactobacillus curvatus and Staphylococcus xylosus taken in ratio of 1:1 are used. As salting components table salt and in amount of 2-3 % and sodium nitrite are used, wherein in dissolving of salting components in water defatted pasteurized milk or milky whey also are used. Brain is fermented at 30-35C for 8-12 h to produce acidity of 40-50T (pH 5.5-6.0).
