SUBSTANCE: method involves rinsing beet roots with water containing bactericidal agent; grinding beet roots into chips; feeding beet chips in diffuser; providing extraction with water containing bactericidal agent, such as ozone; discharging diffusion juice from diffuser for further processing. Water used for rinsing of beet roots is saturated with ozone to concentration of 10- 20 g/cu. Feed water is treated by saturating it with ozone to concentration of 5-15 g/cu.m. EFFECT: improved quality of diffusion juice, reduced unaccounted saccharose losses due to providing sterility conditions of extraction process. 1 ex
