Zusammenfassung: | FIELD: food industry. SUBSTANCE: invention relates to methods for preparing fructose-glucose syrup from root crops enriched with polysaccharide inulin. Method involves preparing juice from Jerusalem artichoke root crops. Juice is purified and inulin is hydrolyzed with food acid. Then hydrolyzate is cleared and concentrated to prepare syrup. Juice is isolated from root crops by their grinding up to particles size 0.3-1.0 mm followed by ground mass pressing. Purification of juice is carried out at heating to temperature 80-85 C and keeping for 1-3 min and then juice is filtered to remove protein and colloidal-dispersed impurities. Purification of filtered juice from inorganic impurities and inulin with molecular chain length less 400 Da is carried out by nanofiltration. Hydrolyzate is cleared with mixture of activated carbon and perlite. EFFECT: simplified technology for preparing fructose-glucose syrup, enhanced economy of process. 1 ex |
