Zusammenfassung:wine-making, particularly, production of grape red highly-alcoholic wine. SUBSTANCE: grape red highly-alcoholic wine contains white grape wine material, sugar-containing component, food flavor additive "Chernaya Smorodina" (Black Currant), and ethyl rectified alcohol at the following ratio of ingredients per 1000 dal of prepared wine: food flavor additive "Chernaya Smorodina", 0.1-10.0 kg; sugar-containing component, up to mass concentration of sugar 100 g/cu.dm; grape wine material, 724.5-964.0 dal; ethyl rectified alcohol, the balance in terms of blend strength up to 18% vol. The wine contains, as grape wine material, dry and/or fortified grape wine materials. The wine may contain, as grape wine material, red and/or white and red grape wine materials with amount of white wine material in mixture from 1 to 25%. As a sugar-containing component, the wine comprises grape concentrated wort and/or 65-70-% sugar syrup. Due to addition of said flavor, the wine possesses aroma remaining that of freshly-torn leaves of black currant and taste of pomegranate with plum. EFFECT: broadened assortment of red grape highly-alcoholic wines. 4 cl, 3 tbl, 6 ex
