SUBSTANCE: apparatus has capacity unit with vertical cylindrical casing, jacket mounted on casing, sediment collector arranged in casing bottom, mixer-distributor, cooling water collectors communicated with jacket via pipelines, direct-flow heat- exchanger, centrifugal pump, connecting pipelines, cut-off fitting and sensors for measuring beer wort temperature in apparatus, sensors for determining temperature of artesian water supplied into heat-exchanger, and temperature of water at jacket outlet end. The process of cooling from 95 C to 6 C and of clarifying beer wort is performed in capacity unit, which provides for keeping beer wort under sterile conditions and more complete protein separation. Pure artesian water is used as intermediate coolant in an amount of 2/1 with respect to the volume of cooled beer wort, with 70% of beer wort heat being recovered (is used for heating water employed for subsequent mash and for washing parts of apparatus) and only 30% of heat is withdrawn by brine. Such results are due to apparatus construction allowing water flow direction to be changed at different beer wort cooling stages, in particular, at final stage, when water is directed in closed "jacket-heat-exchanger-pump-jacket" circulation circuit.
