Zusammenfassung: | food industry. SUBSTANCE: 10 to 40% aqueous lactose solution is prepared and introduced into cathodic and anodic chambers of electric activator. In cathodic chamber, isomerization of lactose at pH 11.5-12.5 proceeds under influence of electric activation of solution. In anodic chamber, lactose is hydrolyzed at pH 1.0-3.0 to give galactose and glucose. Resulting hydrolysate is thickened either in mixture with isomerized solution or separately, after which lactose is crystallized and lactose crystals are separated from syrup. EFFECT: reduced expenses due to preparation of syrup containing lactulose, glucose, and galactose and joint use of catholyte and anolyte fractions. 2 ex |
