SUBSTANCE: hulled grain is ground to particle size below 0.3 mm, mixed with hot water at duty 3.0, thermally stable alpha-amylase is added in amounts 200-350 g per 1 t of starch raw and hydrolysis is carried out for 3-4 hr at pH 6.5 (optimum for glucoamylase) at temperature 55-70 C. Resulting substrate, constituting solution of mono- and disaccharides containing 40- 50% of grain protein, is mixed with nutritious salts, diluted with water and depleted culturing medium and used for aerobic culturing of yeast.
