MEAT GRINDER GRID

FIELD: food-processing industry. SUBSTANCE: grid is made in the form of disk with concentric rows of round-section openings. Axis of each opening is simultaneously inclined at an angle alpha to straight line positioned in grid plane and directed to side opposed to direction of rotation of cutter, at an angle beta to straight line directed toward axis of grid. Angle alpha is selected such that it is equal to alpha = 90o- , where is angle of internal friction of product ground by meat grinder; angle beta is determined from ratio of beta = arctg pifd+t/pid-t, where f is friction coefficient of product ground by meat grinder against terminating coil of auger; d is average diameter of terminating coil of auger, mm; t is pitch of terminating coil of auger, mm. EFFECT: increased efficiency of meat grinder, reduced pressing through force applied by auger to product and improved grinding quality. 3 dwg
