Zusammenfassung: | FIELD: food industry. SUBSTANCE: method involves preparation of batch, cooking, and separation of pulp into liquid phase and grain. The latter is washed and dried. Wash water is used for preparation of batch. Clarified liquid phase is subjected to two-step saccharification. In the first step, optimal pH and temperature values for alpha-amylase activity are maintained. Saccharified material is separated by ultrafiltration into two streams. The first stream (enzyme alpha-amylase concentrate) is recycled into the first saccharification step, and the second one is transferred into the second saccharification step, where optimal pH and temperature values for glucoamylase activity are maintained. After second-step saccharification, mash is separated by ultrafiltration into two streams. The first stream (enzyme glucoamylase concentrate) is recycled into the second saccharification step, and the second one (mash filtrate) is subjected to fermentation. To ensure stable fermentation activity of enzymes and compensation of their inactivation, enzyme solution in amount providing constant enzymatic hydrolysis rate is continuously fed into saccharificator.
