Zusammenfassung: | FIELD: food-processing industry. SUBSTANCE: method involves settling particles of flue gases on impactor substrate and enlarging these particles. Diameter of nozzles, flow rate of aerosol directed through nozzles and distance from nozzles to substrate are chosen such that during passage of aerosol, containing mixture of dispersive smoke and water drop phase, through impactor smoke particles of 0.01-0.5 mm diameter do not round about substrate, but come into collision with and settle on it. Upon reaching critical mass, bound particles flow from substrate into collector. Apparatus has gas source, absorber, separator, cooled circuit, device for collecting and discharging gas into atmosphere, accumulator and enlarger. EFFECT: increased efficiency in catching gas particles, simplified construction of apparatus and improved quality of smoked product by using smoking preparation imparting specific flavor and aromatic qualities. 3 cl, 1 dwg, 1 tbl |
