Functional properties of the product are derived from the herbal blend whose constituents are the following herbs: buckthorn bark (Frangulae cortex), parsley fruit (Petroselini fructus), caraway seed (Carvi fructus) and menthe leaf (Menthae piperitae folium). The herbal blend for enhancement the regulation of body weight is added in the form of pulvis in the amount of 4% to the weight of flour.On the basis of the quality parameters of ingredients and desired attributes of the final product (flavour and texture), the technological process of preparation and manufacture of the cookies supplemented with herbal blend has been developed. The technological process of preparation comprises the preparation of homogenous dough, its moulding and baking. The resulting cookies have a specific colour with visible particles of herbal pulvis and a pleasant taste. Keks sa biljnom mešavinom je jedinstven proizvod iz grupe finih pekarskih proizvoda namenjen ishrani osoba koje imaju poremećaj varenja, metabolizma, a mogu ga u ishrani upotrebljavati i druge odrasle osobe.Funkcionalna svojstva proizvoda potiču od biljne mešavine, u čiji sastav ulaze sledeće biljne droge: kora krušine (Frangulae cortex), plod peršuna (Petroselini fructus), plod kima (Carvi fructus) i list mente (Menthae pip. folium).Biljna mešavina za poboljšanje i regulisanje telesne težine dodata je u formi pulvisa u količini od 4% na masu brašna.Na osnovu kvaliteta sirovina i željenog kvaliteta finalnog proizvoda (aroma i tekstura) razrađen je tehnološki proces pripreme i proizvodnje keksa sa biljnom mešavinom.Tehnološki proces pripreme podrazumeva formiranje homogenog testa koje se nakon oblikovanja podvrgava termičkoj obradi.
