Zusammenfassung: | Invention herewith described refers to the production of special rolls with added expanded amaranth (amaranthus sp) seeds belonging to the group of dietary bakery products that are characterized by increased nutritional value. Technological process is standard as for all types of bakery products, and the ratio of expanded amaranth seed and wheat flour is expressed in percentages by weight 10%: 90%.Other raw materials used for the roll production in quality correspond to the Regulations on the quality of wheat, milling and bakery products, pasta and quickly frozen dough (Official Gazette of the SFRY, No. 527/1995).
Specijalno pecivo sa dodatkom ekspandata od semena Amaranthus sp. pripada grupi specijalnih vrsta pekarskih proizvoda za dijetalnu ishranu koje odlikuje povećana nutritivna vrednost. Tehnološki postupak proizvodnje je uobičajen je za specijalne vrste pekarskih proizvoda, a odnos ekspandata od semena Amaranthus sp. i pšeničnog brašna je izraženo u masenim procentima 10% : 90%. Ostale sirovine koje se koriste za proizvodnju peciva po kvalitetu odgovaraju Pravilniku o kvalitetu žita, mlinskih i pekarskih proizvoda, testenina i brzo smrznutog testa (Sl.list SFRJ br 52/1995). |
