PROCESS FOR PREPARING BIO-ACTIVE PROTEINS AND AMPHIPHILIC PROTEINS FROM LIGNOCELLULOSIC MUSHROOM CULTIVATION SPENT SUBSTRATE

The invention relates to a process for preparing bio-active peptides with antimicrobial activity and amphiphilic proteins from lignocellulosic mushroom cultivation spent substrate . According to the invention, the process consists of the stages of spent substrate wet grinding, protein and peptide extraction, with a phosphate buffer solution, separation of un-extracted substrate from the aqueous extract by filtration, hydrophobin extraction, separation of peptides with antimicrobial activity, concentration of permeate up to 5% dry matter and of retentate until manifestation of micellar phase which comprises amphiphilic proteins, separation thereof by centrifugation and sterilization of the protein solution with enzymatic activity.
