Zusammenfassung:The invention relates to a process for obtaining a complex enzyme lipidase-amylase preparation, used in the bread manufacture industry. According to the invention, the process consists in cultivating the Endomycopsis fibuligera yeast on an acid medium of soy flour, there being obtained a fermented medium which may be used as such or after drying at 45...50 C and milling as powder. Invenţia se referă la un procedeu de obţinere a unui preparat enzimatic complex, lipidazo-amilazic, utilizat în industria de panificaţie. Procedeul conform invenţiei constă în cultivarea drojdiei Endomycopsis fibuligera pe un mediu acid din făină de soia, cu obţinerea unui mediu fermentat, care se poate utiliza ca atare sau după uscare la 45...50°C şi măcinare sub formă de pulbere. ŕ
