Zusammenfassung: | Use of gum acacia comprising Acacia senegal, to prepare a fermented milk or soy product (gum), i.e. used at a concentration of 3-10 wt.%, preferably 5-9 wt.%, is claimed. Independent claims are included for: (1) a process of preparing the product, comprising incorporating a concentrated aqueous solution of Acacia senegal (10-30 wt.%) into the product, where the concentrated aqueous solution comprises gum acacia (approximately 30-50 wt.%) and the product is obtained by fermentation of an initial product made from milk or soy i.e. preinoculated before by ferments; and (2) a milk or soy based fermented product containing gum acacia, obtained by implementation of the above process. |
