A protein composition and its use in restructured meat and food products
The invention provides protein compositions containing structured protein products having protein fibers that are substantially aligned. At least 55% of the protein fibers forming the structured protein product are contiguous to each other at less than a 45° angle when viewed in a horizontal plane.
