The invention is also directed to yeast cell based saccharide composition with increased water-solubility. The saccharide compositions disclosed in the invention can be used as nutritional or pharmaceutical additives or as part of nutritional or pharmaceutical composition in order to promote the health of an animal or human subject to which said composition is administered. The invention is also directed to methods of producing said saccharide compositions.
