Zusammenfassung:Disclosed is a process for producing a health drink and a product derived therefrom comprising of the following steps: harvesting of matured cacao pods using appropriate tools, usually pruning shears, soaking of cacao pods to soften adhering dirt and impurities, washing of soaked pods by either hand brushing or using a mechanical washers, disinfecting of washed cacao pods by soaking in an open tank filled with chlorinated water, draining and air drying of disinfected pods using raining cages, breaking or splitting of disinfected pods using raining cages, breaking or splitting of disinfected pods using manual or mechanical pod breaking or splitting procedure, extracting of wet beans from split pods and placing them in food grade stainless steel fermentary boxes equipped with provisions for sanitary collection of cacao sweatings, collecting of cacao sweatings for the first four hours on set fermentation of wet beans, filtering of extracted cacao sweatings, adding of distilled water to the cacao sweatings, adding of refined sugar to cacao sweatings solution, adding of Sodium metabisulfite at a limit Of 0.5 grams per liter Of formulation, flash pasteurizing of cacao health drink solution, filing of hot pasteurized cacao health drink to PET bottles and immediate capping, cooling off of capped bottled health drinks and labeling, and storing of bottled cacao health drink at chilled condition of 2-4 degrees Celsius temperature range.
