Zusammenfassung:Disclosed is a method of preparing loaf bread enriched with squash or kalabasa (Cucurbita maxima) for enhancing the color and flavor of the loaf bread containing flour, yeast, sugar, shortening, egg, carrageenan and kalabasa in the composition comprises together with uses thereof. The method comprises of a) Boiling the squash (Cucurbita maxima); b) Mashing the cooked squash, set aside; c) Sifting the flour; d) Mixing the sifted flour with sugar, yeast , water, salt, shortening, carrageenan and mashed squash; e) Blending the mixture to form a dough; f) Setting aside the dough for 20 minutes; g)Kneading/punching the dough; h) Weighing the kneaded dough to desired weight and sizes; i) Flattening dough and set aside; j) Proofing the dough; k) Baking the proofed dough in a hot oven until done.
