Zusammenfassung:The study takes fresh Lentinus edodes as the object, and analyzes the effects of acetic acid soaking treatments with different pH and different temperatures on removal of cadmium from fresh Lentinus edodes, and on nutritional characteristics 5 (polysaccharide content, total phenol content, DPPH, ABTS, FRAP and other antioxidant activities) of Lentinus edodes. The results show that different acetic acid treatments are all effective in removing cadmium from fresh Lentinus edodes with a removal rate of 26%-7l%. Among them, when Lentinus edodes is soaked for 30 min at 10 pH of 4 and temperature of 50°C, the removal effect of cadmium and nutritional characteristics are good with a removal rate of cadmium. being 63.58%. Moreover, the polysaccharides and total phenols are more easily dissolved, and the antioxidant capacity is enhanced, which facilitates deep processing and improving nutrient l5 absorption rate of Lentinus edodes.
