Zusammenfassung: | The invention relates to an improved method for coating a cheese, wherein a cheese coating composition comprising polylactic acid having a number-averaged molecular weight (Mn) of at most 50000 g/mol, is applied the surface of the cheese. The invention also relates to the corresponding cheese coating composition, use thereof for coating cheese and the coated cheeses. It was found that the cheese coating compositions according to the invention are an excellent renewable and environmentally friendly alternative to petrochemical-based coatings such as polyvinyl acetate coatings. |
