THE PRESENT INVENTION PROVIDES AN IMPROVED METHOD FOR MAKING MILK POWDERS FROM FRESH MILK WHEREBY PROTEIN DENATURATION IS MINIMIZED DURING SPRAY DRYING, THUS IMPROVING PROTEIN CONTENTS IN THE MILK POWDERS YIELDED THEREFROM.
