Zusammenfassung:The invention relates to the utilization of O/W emulsions in fermentation processes, said emulsions containing at least water, emulsifying agents and an oil phase that contains one or more compounds selected from the groups consisting of: a) fatty acid alkyl ester and/or b) triglycerides of vegetable origin, wherein the emulsions are produced according to the PIT method and the emulsions have an average drop size ranging from 50 to 400 nm.. La invencion se refiere a la utilizacion de emulsiones o/w en procesos de fermentacion, las emulsiones que contienen cuando menos agua, agentes emulsificadores y una fase oleosa que contiene uno o mas compuestos seleccionados de los grupos que consisten en: a) alquil esteres de acidos grasos y/o b) trigliceridos de origen vegetal, en donde las emulsiones se producen de acuerdo con el metodo PIT y las emulsiones tienen un tamano de gota promedio en el intervalo desde 50 hasta 400 nm.
