Zusammenfassung:The invention relates to microparticles comprising a matrix consisting of casein and chitosan, and probiotic bacteria. Said matrix protects said probiotic bacteria during (i) the processing thereof, (ii) the storage thereof, and (iii) the transit thereof through the gastrointestinal tract, extending the useful life thereof. The invention also relates to the method for producing the microparticles, and to the products and compositions containing same. La presente invención se refiere a unas micropartículas que comprenden una matriz constituida por caseína y quitosano, y unas bacterias probióticas; dicha matriz protege a dichas bacterias probióticas durante su (i) procesamiento, (ii) almacenamiento y (iii) tránsito a través del tracto gastrointestinal, prolongando su vida útil. La presente invención también está dirigida al método de obtención de las micropartículas y a los productos y composiciones que las incorporan.
