La presente invención se refiere a una enzima asparaginasa derivada del hongo Basidiomiceto, en particular donde el Basidiomiceto es Flammulina velutipes. Un método para hidrolizar al menos una de L-asparagina o L-glutamina. También se describe un método para reducir la formación de acrilamida en una sustancia que comprende L-asparagina.
