Zusammenfassung:	Disclosed herein are methods and compositions for isolating a protein fraction from a potato sample. The methods include adjusting the potato sample containing the protein fraction to a pH of about 4.0 to 5.2; and loading the potato sample onto a sulfonated epoxy resin, wherein the sulfonated epoxy resin comprising Formula (I) is adjusted to a pH of about 4.0 to 4.5. The methods also include washing the sulfonated epoxy resin and eluting the protein fraction. En el presente documento se describen métodos y composiciones para aislar una fracción de proteína de una muestra de patata. Los métodos incluyen ajustar la muestra de patata que contiene la fracción de proteína a un pH de aproximadamente 4.0 a 5.2; y cargar la muestra de patata en una resina epoxi sulfonada, en donde la resina epoxi sulfonada que comprende la Fórmula (I) se ajusta a un pH de aproximadamente 4.0 a 4.5.
