Zusammenfassung:The present invention relates to compositions and methods for the production of a hydrolysate comprising at least one endoprotease and a tripeptidyl peptidase capable of cleaving tripeptides from the N-terminus a peptide and/or proteins having one or more of lysine, arginine or glycine in the P1 position wherein said tripeptidyl peptidase is capable of being used at a temperature between 45ºC and 70ºC. La presente invención se refiere a composiciones y métodos para la producción de un hidrolizado que comprende al menos una endoproteasa y una tripeptidil peptidasa que puede escindir tripéptidos del N-terminal de un péptido y/o proteínas que tienen una o más de lisina, arginina o glicina en la posición P1, donde la tripeptidil peptidasa puede usarse a una temperatura entre 45°C y 70°C.
